Green Eggs, no ham.



These are indeed the best green eggs I have ever tasted. It's always so tricky to incorporate healthy things into your diet. Frittata's are fabulous. I call them the Queen of omlettes. My version varies to most commonly made Frittatas, I bake them.

Baked Vegetable Pecorino Frittata

5 Eggs
1/4 tsp freshly ground pepper
3 mini potatoes, thinly sliced
3 green onions, chopped
6-7 large basil leaves, minced
4-5 pieces of rapini, with stems
1-3 cup pecorino cheese
1/4 tsp dried savory
1/4 tsp dried sage
1/4 tsp salt

Preheat oven to 325 degrees.
Bring one pot of water to a boil. Reduce heat to medium heat and add potatoes. Steam Potatoes slices for approx 6-7 mins, until they appear slightly translucent, slightly soft, but still firm. Set aside, blanch rapini and Kale in a pot of hot water, using similar method, but for approximately 1-2 mins max. Beat eggs, add herbs, salt and pepper. Mix in Pecorino cheese. Pour egg mixture into a shallow casserole dish, and add kale, rapini and potatoes. Bake for approx 18-20mins. Then broil for approx 1min so that surface appears golden brown, while broiling, check on frittata ever so often to ensure that it doesn't burn.
